The Family Behind Solstice

We’re Garrett and Isabelle, the stewards behind Solstice Beef Company.

2017

The Beginning

Garrett and Isabelle met in the mountains of West Virginia, where he was a rock climbing guide and she taught Outdoor Education.

They fell for each other fast and were drawn to a simpler, more self-sufficient way of life. Learning from old-timers, they traded backyard harvests and found joy in growing and sharing real food.

2019

Food as Medicine

After their first child was born in 2019, Isabelle felt a strong pull to reclaim her health. She had spent nearly a decade battling rheumatoid arthritis and relying on medications that often did more harm than good.

Through an intensive elimination diet, she reversed her symptoms and kept them at bay through food and lifestyle.

That experience changed how we saw nourishment, health, and the kind of life we wanted to build together.

2020

Basic Beginnings

They moved to Isabelle’s childhood family farm in Rappahannock County, Virginia, and started our first small operation, Rucker Farm.

The family farm began with 50 broiler chickens on 12 acres and a dream of building a cattle herd. By 2021, pigs and turkeys were added as well as the first small group of cows. Life revolved around caring for animals, learning by doing, and balancing farming with family life.

2022

Growing and Changing

They welcomed their second child and the farm was thriving. At the busiest, the family raised 3,200 broilers, 50 pigs, 200 turkeys, and 40 beef cattle in one season.

The days were long, with early mornings, farmers markets, deliveries, and late nights planning for the next season.

2023

Building a Community

They cultivated a committed customer base involved in activities and learning about the land through hands-on activities and learning sessions at the farm.

2025

The Next Step

By the time their third child arrived, a lot had been about rhythm, patience, and scale. They desired a slower pace, protecting quality of life, and making more space for family while continuing to care for the land.

Our Journey Continues

The solstice marks a turning point, a reminder of balance, light, and the cycles that sustain all living things. That’s when Solstice Beef Company came to life.

They expanded to several leased properties across Central Virginia, allowing time and space to focus on cattle and regenerative grazing while sharing these practices on a broader scale. Though they're no longer based on the family farm - roots and values remain the same.

They believe good beef starts with good ground. Every pasture move and every decision is made with the goal of leaving the land better than we found it. Following regenerative grazing practices is paramount - keeping cattle on a tight rotation so the grass has time to rest and rebuild. The result is healthier soil, cleaner water, stronger forage, and better beef.

Making sure not to grow faster than the land can support, their goal is simple: to build a farm that lasts, one their kids can grow up proud of, and one that keeps producing healthy soil, healthy cattle, and good food for generations to come.
